The perfect cheese for Easter, Uovo di Capra (translates to “goat’s egg”).Â
Produced by breeders turned cheesemakers Valentina Cano and Robert Facchetti, this Robiola is a beautiful and delicate cheese with a playful twist. Created using raw goats milk from farms right next to the dairy, the milk is processed as soon as it arrives using no mechanical tools or pumps. This cheese is entirely handmade, allowing for the delicate texture and nuanced flavours to flourish. Made to looked like a boiled egg, the centre “yolk” is created by flavouring the cheese with saffron.Â
