This cheese is both visually stunning and delicious, Tomme aux Fleurs is made is made in small batches by artisan cheesemakers in Austria. Made from thermalized cow’s milk, it first undergoes 6 months of maturation in cool fresh cellars, then undergoes a second ripening period after the wild flowers are added to allow introduction of the aromas into the cheese. The final product has a subtle salty, hazelnut flavour with wisps of wildflower.Â
