Le Fleurs des Monts
Le Fleur des Monts is an uncooked pressed cheese – typically aged for 3-6 months, and all the way up to 9.
Inspired by the crumbly, flavorful sheep milk cheeses made in the French Pyrenees. Le Fleur des Monts is made from spring and summer milk, when the sheep are grazing on wildflowers at the foot of the mountains in Ste-Hélène-de-Chester, Quebec.
When young, more of the grassy, floral undertones are present. Aged, the cheese becomes sharper with undertones of roasted almonds.
